The gourmet restaurant – lauded by Peru’s prestigious Summum guide – is one of the finest in Cusco region. It takes full advantage of the natural and agricultural bounty of the Sacred Valley – its grains, herbs and vegetables (including its famed giant corn and potatoes), and local river fish, meats and poultry. Unusual for a country hotel, it features top-notch service and an extensive list of wine and cocktails. Casually sophisticated, the restaurant is a soaring, light-filled space, with a wood-burning fireplace, floor-to-ceiling windows, and impressive mountain views from virtually every table (see Chef Javier Morante´s original menu).
Special event meals are a mainstay of the restaurant, staged in the hotel’s gardens. Parrillas (barbecues) and pachamancas (an Andean country specialty in which meats, potatoes and other vegetables are buried and roasted in a rustic, underground “oven”) are prepared for groups with advance notice. Traditional Andean customs, such as the pago a la tierra (in which offerings of alcohol and foodstuffs are given to the earth to give thanks for its continued bounty), are followed, and native dances and shows, including Peruvian Paso horses, can also be arranged. Breakfast (the daily buffet includes a custom omelet bar as well as a full complement of local fruits, juices, cereals and more), lunch and dinner are served daily.
